1-2 MINUTES no Baking Mug Chocolate Brownie!

INGREDIENTS for 1 portion.

2 Tbsp oat flour
1/4 tsp baking powder
1.5-2 Tbsp stevia (more or less to taste…) or Agave Syrup.
1.5 Tbsp raw cocoa powder
1 Tbsp almond,low fat or coconut milk.
1/4 tsp vanilla
1 tsp coconut oil (melted)
1 Tbsp egg whites
A few mini dark chocolate chips (optional)

PROCEDURE

🍫Combine all ingredients except chocolate chips well using a fork.
🍫Transfer to a mug see above.
🍫Top with chocolate chips (optional)
🍫Bake in microwave for 70 seconds at fulll Watt

🍫 Turn the mug and take the brownie out!

Low Calorie Salad Dressing

500g low fat yoghurtsimple-salad-recipes-maria-dressing

Seasalt

Fresh pepper

2 spoons english mustard

one hand full of basil or coriander

1 garlic glove

1/2 red spicy pepper

2 spoons white wine or apple vinegar

half of lemon juice
Mix all the ingredients above in a blender and DONE:) you can keep it in the fridge for some days,for 2-3 salads over the week.

Oopsie Bread for Burgers :)

Here I am again with one healthy low calorie idea of our beloved BURGERS!!!

Separate 3 eggs.

First, beat the whites with a pinch of salt in a bowl until you can turn it upside down!

Mix the yolks with 1/2 package of Philly low fat cream cheese or quark.

Gently fold together both mixes.

Spread on “cookie paper”

Bake at 150 C 15-20 min.oupsie after Until they get gold-brown. And again:) DONE!

Add your beef minced meat. I like to buy it fresh and form the burgers myself and grill them on my own before baking the“bread“.

WIth some fresh vegetables or some sour cucumber,you will feel like eating real burgers:)

You can add sauces as well ,but I try to avoid them or I use low fat ones…

Grilled Aubergine and Zucchini-filled with low fat garlic cream cheese.

In the mood for a fast and delicious snack or dinner?zukkini si vinete umplute

Then you need to try this out:)

Just use a grill pan, or even a normal pan.No oil needed.

Slice the aubergine and the zucchini, spice it up,however you like.I used italian spices and some cayenne. In order to have them more tasty,you can do this the evening before and leave them in the fridge in bain marie.

Grill the vegetables on each side for a couple of minutes.

Take 200gr low fat cream cheese (  I used fitness Philadelphia 4% ),add garlic,dill and a pinch of salt et Voila!

Fill the zucchini and the aubergine with it,roll them  and pin them with a toothpick.

My recommendation is to serve them cold.

Zucchini Pasta Bolognese

Here an idea for some low-carb  healthy PASTA:) for those who did not think of this yet!

It is easy to cook and replaces real pasta pretty well.

Just take 2-3 medium Zucchini´s. Pill them of with a potato pillar-see in the pic below- if you do not have a special one.

Cook the pasta in a pan with some garlic,2-3 drops of olive oil,salt and pepper and add what-ever  spices you like.

Cook the low fat minced beef/turkey-meet  (max 10% fat ). Use a homemade tomato basilica sauce,or Zucchiniif you do not have time,you can also use the ones you find in the supermarket.

Combine meet,sauce and zucchini pasta in one pot,and cook for 5 more minutes in low heat.

Serve with some low fat shredded mozzarella or parmigiana and some fresh basilica!.

It was delicious:)trust me! Enjoy!

Oats-Ginger Biscuits

Oats - Ginger Biscuits

Here another idea for some biscuits easy to make. I did them for the Christmas period, but based on the ingredients you add,you can always serve them as niiiice snack.

½ cup whole wheat flour

1 ¼ cup of oatmeal

½ cup unsweetened coconut flakes(optional)

¾ tablespoon of baking soda

½ cup chopped walnuts

½ cup melted coconut oil- I replaced the oil with some low fat quark

¾ cup honey- I replaced the honey with Agave Syrup. Can use Sweetener as well.

1 large egg

Ginger pinch

1 teaspoon vanilla extract

½ cup chopped dates

In a large bowl, mix flour, oatmeal, coconut flakes, baking soda and chopped nuts. Make a hole in the middle and give the bowl aside.

In another bowl, mix coconut oil, honey, egg, vanilla and a pinch of salt.  After mixed well, pour this mixture in center of dry ingredients bowl. Mix with a spatula and add the chopped dates or dried fruits or chocolate or WHATEVER your imaginations says to you:)

Form the  round biscuits,  and bake them in the oven for 10-15 min.(180 degrees).

Chocolate mini cakes with NO flour

Cockolate Coookies with no flour

This cake is very easy to do ,  under 100 calories per 50 grams and contains no gluten.
• 150 grams of dark chocolate with 80% cocoa
• tablespoon orange zest (optional)
• vanilla essence
• 2 ripe bananas
• tablespoon honey (optional) or Agave Syrup
• 1 whole egg
• 3 egg whites

Normally you can adapt the recipe with the ingredients most wanted.

Melt chocolate in a water bath, add vanilla and orange zest.

We pass the bananas with a fork and add agave syrup.

When the chocolate has melted, mix with banana and add the whole beaten egg as well.

Separately, beat the egg whites until they are stiff, then add the chocolate over,slowly. The mixture is put in the form of muffins (I used silicone ones). Place in the pre-heated oven and let about 10-15 min.

The cookies should be soft in the interior. They were delicious:) Yummmmy!

Yummy Oats-Apple Cupcakes

Shredded Apple Oats cup cakes

What you need:

100g oats

100g Almond flour

2 scoops Vanilla Whey( not mandatory,but makes them more tasteful )

1 tablespoon shredded coconut

2 tablespoons baking powder

4 Eggs

1 shredded Apple

125g Quark, or low fat Greek-yogurt or cream cheese.

Mix all ingredients! Add shredded fruits if you want.

Put in Cupcake forms and in the oven for 20 min. Oven T at around 180 degrees and magic happens!! Yummy:)

Note that you can make the same with other shredded fruits as well, as bananas or mashed forest fruits. Just be creative and try them out 🙂

Cauliflower Pizza

Caulifower Pizza

1 head cauliflower 7 – 8″ wide

1 egg, large

1/2 cup Parmesan or Light Mozzarella cheese, grated/shredded

1 tsp herb seasoning(rosemary, basil etc….adapt how you want)

1/8 tsp salt
1/4 tsp freshly ground black pepper.

Preheat oven to 180 degrees and cover  round pizza baking sheet with parchment paper.
Rinse cauliflower, remove the outer leaves and separate into florets with a paring knife. Place cauliflower florets in a food processor and process until “rice” texture.
Place on a prepared baking sheet and bake for 15 mins. Or even in the microwave for 2-3 min.
Remove cooked cauliflower from the oven and transfer to a bowl lined with a cheesecloth( TIFON). Then squeeze the liquid out of the ball, cauliflower inside the cheesecloth, as hard as you can. Repeat several times! I used some kitchen paper.
Increase oven T to 200 degrees. Transfer cauliflower to a mixing bowl along with egg, cheese, herb seasoning, salt, black pepper and mix to combine. Transfer cauliflower mixture onto the same baking sheet,and flatten with your hands until thin pizza crust forms.
Bake for 15 – 20 minutes and remove from the oven. TADAAAA:))))
Top with your favourite toppings and bake again until cheese on top turns golden brown,a few more minutes.
